how can I place the sub category listing like this:
Gallery Name

sub category
rather than:
gallery name
description

You want to take out the subcategory line

exactly.
I think it'd look better if you treated it like how mybb treats their sub forums.
example:

Changed in 5.0.4
+Changed subcategory display on main galleries instead of sepeate line for subcategories they are now part of the description for the category
